Welcome to Creating Healthy Times. Let me share a little bit about myself: I grew up in the beautiful mountain area of the Black Forest in the South of Germany, close to the borders of France and Switzerland. As a little girl, my life revolved much around outdoor sports and art, and as I grew older, a passion for baking and cooking.

After finishing grade school, I went into dentistry, enjoying the combination of medicine and a crafty job. During this time, I met my husband, who was also part of the faculty at the University of Freiburg. We moved to New Orleans

and several years later to the countryside near Philadelphia to follow his academic career, adding

four children along the way. Throughout my life,

I always seem to have attracted an abundance of adventures.

Unfortunately, there had always been something amiss in my life. That something was my health. Dealing with chronic fatigue, severe intestinal inflammation, chronic pains and endless doctor visits put an almost unbearable strain on my life, burdening me with countless physical and psychological problems. Throughout all of my adventures and my daily life, I had to push way beyond my body’s capacities. Some days it worked, and some days I was punished with massive symptoms. Endless doctor’s appointments and treatments did not lead to the life I was looking for: a life without pain and full of energy.

After losing faith that conventional medicine could ever solve my problems, I embarked on an adventure of a different kind: nine years ago, advised by a naturopath, I changed my diet to the Specific Carbohydrate Diet. With the proper nutrition, my body was able to heal the inflammation, and symptoms slowly but surely vanished, adding a whole new dimension to my life that I could never have imagined!

In this blog, I want to share my passion for cooking along with my experience with a grain, sugar, and lactose-free diet that enabled my body and mind to heal. Feel free to join me in creating healthy times.
